New recipe I made this week: Mexican Bow-tie Pasta with Chicken

this is a very kid-friendly and easy recipe. It comes from Mary Ostyn's "Family Feasts for $75 a Week" cookbook:

1 lb bow-tie pasta (can use any shape)
1 1/2 lbs chicken breasts or boneless thighs
2 T. butter
2 cloves garlic, crushed
1/4 cup flour
1/2 cup milk
1 cup chicken broth
1 cup salsa (I used taco sauce b/c my little one and dh don't like "chunks"...)
1 8 oz pkg cream cheese, cut into 1/2" cubes

Cook pasta according to directions; drain; set aside

Meanwhile, cut chicken into bite sized pieces. Melt butter in large skillet over med heat. Add chicken and cook, 4-5 min. Add garlic and continue to cook until chicken is just cooked thru. Stir in flour; slowly pour in mile and broth, stirring constantly. Add salsa and cream cheese and stir until sauce is hot and bubbly and cream cheese is melted and smooth.
Add drained pasta to skiller; stir until pasta is coated w/sauce and everything is well combined. Serve immediately.

Serves 6
