Description: This is one of those recipes that is so easy and so good, most people are just amazed. I stumbled upon this a couple of years ago on one of the major recipe sites and then modified it to my family's taste. To make, there is just 2 ingredients and then you can snazz it up however you like.

Ingredients:
2 boxes of cornbread mix (like Jiffy)
2 package of hot dogs (approximately 16-20 dogs)
Directions:
Make cornbread mix according to directions.
Cut up hot dogs into bite-size pieces.
Spread hot dogs on bottom of greased casserole dish.
Pour cornbread mix over dogs and cook according to box directions. Note that because of the hot dogs, cooking time may need to be adjusted up a bit.
Cut and serve as you would a corndog, with mustard or ketchup or other condiment.
Variations (pour over hot dogs before covering with cornbread mixture):
* Sprinkle finely diced onions and bacon bits over the hot dogs.
*. Top with a can of chili and shredded cheese for a chili-cheese corndog.
* Sprinkle shredded cheese over the top of the casserole 5 minutes before baking is done.
* For those who don't like cornbread, I make a chili-cheese dog version. Instead of using cornbread, make a batch of biscuit mix, such as Bisquick. This is particularly good for chili-cheese dog casserole.
