This recipe size is not for a LOK family - you need to double it. I also guess-imated all the ingredient portions. If you are making extra to freeze, prepare just the filling. Freezing it fully prepared will dry out the cheese and tortillas unless you are going to use it within a few days. I freeze it in portions

This recipe is obviously a freezer recipe. If you're not into freezer meals, it's still good the first time around. We're a family of seven total, and I double the recipe and make it in a 13X9 pan. So, larger families might want to consider tripling or quadrupling.
