RECIPES - SLOPPY JOES

Following are a variety of sloppy joe recipes. Each recipe yields between 4-6 servings. All recipes can be easily doubled or tripled.

Traditional Recipe 1

Ingredients:
1-1/2 lb ground beef
2-3 celery stalks, chopped
1 can tomato soup
1/2 can of water
3-4 tbsp ketchup
2-3 tbsp brown sugar
2-3 tbsp vinegar

Directions: Brown ground beef and celery. Add remaining ingredients, bring to a boil, lower heat and for 10 minutes. (Add additional water, if need to bring to desired thickness.)



Traditional Recipe 2

Ingredients:
1 tsp oil
1 tst salt
1 lb ground beef
1/8 tsp pepper
1 med onion, minced
1/4 tsp garlic powder
1 cup ketchup
1/3 cup water
1 tbsp worcestershire sauce

Directions: Heat oil in skillet, add beef and onion and saute 10 minutes, stirring frequently. Add all remaining ingredients and additional simmer 10 minutes.



Traditional Recipe 3

Ingredients:
1 lb ground beef
1/2 cup chopped onion
1/3 cup green pepper
1 12 oz bottle of chili sauce
1/4 cup water
1-2 tbsp brown sugar
1 tbsp Worcestershire sauce
1/4 tsp salt
1/8 tsp pepper

Directions: In a large sauce pan, cook beef, onion, and green pepper until the vegetables are tender. Drain well. Stir in worcestershire sauce, chili sauce, water, brown sugar, salt and pepper. Simmer for 10 minutes, stirring occasionally.



Traditional Recipe 4*

Ingredients:
1 medium onion, chopped
1 lb hamburger
1 14-oz bottle of ketchup
1 tbsp vinegar
1 tbsp mustard
1 tbsp sugar
1/2 tsp cinnamon
1/4 teaspoon cloves
salt and pepper to taste

Directions: Cooked chopped onion in butter until golden. Add hamburger. Cook until browned. Pour off fat. Mix all other ingredients in a bowl, then add to onion and hamburger. Mix and simmer for about an hour.

*This is my father-in-law's recipe. The cinnamon and cloves give the mixture a unique tang. I have found very few sloppy joe recipes similar.



Hot and Spicy Version

Ingredients:
1 lb ground beef
1 can tomato sauce
1 sm can tomato paste
1 bottle tabasco/hot sauce

Directions: Brown meat. Add remaining ingredients. Simmer for 10 minutes.



Southwestern Style

Ingredients:
1 pound lean ground beef
1 tsp minced garlic
1 can condensed cream of tomato soup, undiluted
1/2 cup prepared salsa or picante sauce
1/4 tsp salt
1/2 cup chopped cilantro or sliced green onions (optional)

Directions: Brown meat, with garlic in deep skillet. Drain. Add soup, salsa and salt; simmer uncovered 8-10 minutes, stirring occasionally. Stir in cilantro or green onions. Serve immediately.



Slow cooker version

Ingredients:
3 lb ground beef
2 onions, finely chopped
1 green pepper, seeded and chopped
2 (8-ounce) cans tomato sauce
1 (8-ounce) can water
2 pkgs sloppy joe seasoning mix or 4 tbsp chili powder
Salt and pepper to taste

Directions: Brown ground meat in skillet. Drain well. Add meat and remaining ingredients to slow cooker. Cover and cook on low for 8-10, on high 5 hours. If the mixture contains too much liquid, cook on high the remaining 30 minutes with lid removed.



Vegetarian Version: Black Bean Sloppy Joes

Ingredients:
1 onion, chopped
1 green pepper, diced
1/3 cup water
1 15-ounce can black beans, drained and rinsed
1 8-ounce can tomato sauce
1/4 cup quick-cooking oatmeal
1 tbsp soy sauce
1/2 tbsp yellow mustard
1 tsp honey
1 tsp chili powder

Directions: Place onion and pepper in saucepan with water. Cook, stirring frequently until the vegetables soften, about 5 minutes. Mash beans with a bean or potato masher, leaving mixture a little chunky; do not puree. Add the beans and remaining ingredients to the saucepan and cook over low heat until warmed through, about 5 minutes.
