"SANDWICH" SALADS

As the weather gets warmer, so does your house. No one wants to be using the oven when it's 90 degrees outside and the air conditioning is having a hard enough time keeping the room cool. That's why barbeques were invented! But, sometimes a hot meal is the last thing you want. During those times, opt for cold sandwiches. Below are recipes for three "classic" salads that are great on bread, but also work well on their own, over a bed of lettuce.

Tuna Salad

A slight variation on the traditional recipe. The onion and garlic gives it a nice zip.

Ingredients:
  • 2 cans of tuna packed in water
  • 4 tbsp of mayonnaise or salad dressing (like Miracle Whip)

  • 2 tbsp of sweet pickle relish

  • 1 tbsp of minced garlic (you may substitute 2 tsp of garlic powder)

  • 1/4 cup onions, finely diced
Directions: Drain tuna well. Add mayonnaise and mix until well blended. Add remaining ingredients and stir well. You can chill before serving, but it's not necessary. Makes 4-6 serving.



Crabmeat Salad

Adding sour cream to the mayonnaise give this salad its distinct flavor. The addition of dillweed gives it just the right tang. You may need to adjust the "wet" ingredient to obtain the texture you prefer.

Ingredients:
  • 1 pkg of shredded crabmeat or surimi (imitation crab meat blend)
  • 2 tbsp of mayonnaise or salad dressing (like Miracle Whip)

  • 2 tbsp of sour cream (you can use low-fat, not no-fat)

  • 1/8 cup onions, finely diced
  • 1/4 cup celery, finely diced
  • 2 tsp of dillweed
Directions: Separate/shred crabmeat into bowl. Add mayonnaise and sour cream and mix until well blended. Add remaining ingredients and stir well. Chill before serving. Makes 6-8 servings.



Devilled Egg Salad

This recipe is made using the same technique and ingredients as devilled eggs.

Ingredients:
  • 6 large eggs
  • 2 tbsp of mayonnaise or salad dressing (like Miracle Whip)
  • 1 tbsp of yellow mustard
  • 1/8 cup of celery, finely diced
  • 2 tsp of paprika
  • 1 tsp of seasoned salt
Directions: Hard boil eggs. When cool, peel, cut in half. Smash in bowl. Add remaining ingredients and mix until well blended. Chill before serving.
