OATMEAL CASSEROLE

This is a recipe that was submitted by Nicole to our Lotsofkids Recipe Board. So many of our staff and members have tried and raved about this recipe, that we felt it would be best to feature it here. This recipe would make a wonderful holiday morning dish, a great addition to a hosted brunch, or simply a yummy meal any day of the week.

Ingredients:
6 Cups Rolled Oats (not instant oatmeal)
3/4 Cup Honey
3/4 Cup Brown Sugar
1 Cup Raisins (or dates)
2 tsp. salt
1 tsp. baking powder
2 Cups milk (may add a bit more for more moisture)
1 Cup oil (I often use olive oil)
4 eggs, beaten

Directions:
Combine all in a large bowl. Put into a greased 13 x 9 pan and bake at 350 degrees for 35 min. Serve hot with cream on top if you'd like.

Note: I often add sunflower seeds, pine nuts, flax, any dried or fresh diced fruit...the sky is the limit!
