January 2007 - QUESTION: I'm trying to find a recipe for a chocolate mayonnaise cake. Can you help me? Thanx. ~Diana
ANSWER: Thank you for your question. I have to admit hearing about Chocolate Mayonnaise Cake years ago, but never trying it. Your question made me curious to know how this cake came about. I tried to find it's origin, to no avail. However, what I did find were a lot of people who bragged about how moist and flavorful this confection is. There were many references to memories of years past, with mom (or gramma, or auntie) making a chocolate mayonnaise cake. The idea and basis behind using mayonnaise is that it replaces the traditional eggs and oil in the recipe. Of course, that is essentially what mayonnaise is, the difference being that it is whipped and therefore has a lighter texture.
I asked Anne, Lotsofkids' Household Editor, for a recommendation of a Chocolate Mayonnaise Cake Recipe. Here's her choice:
Mayonnaise Cake, also known as "$100 Cake"
Ingredients:
2 cups flour
1 teaspoon Baking Soda
1 cup Sugar
3/4 cup Mayonnaise
1/2 cup Cocoa Powder
1 cup Milk
1 teaspoon Vanilla
Directions: In a large mixing bowl, mix sugar, mayonnaise and vanilla until blended, then add milk and stir slowly until well mixed. In a second bowl, stir together the flour, cocoa, soda until mixed and then add to the wet mixture and blend well.
Pour into a 9x13 inch cake pan which has been prepared with non-stick cooking spray and bake at 325 degrees F for 40 to 45 minutes or until a toothpick comes out clean when inserted into center of cake.
Frost as desired.
I did my own search on the recipe and found numerous versions of Chocolate Mayonnaise Cake. Most were similar, some variations including adding cinnamon or mint. However, I was intrigued to find this one, which uses eggs in addition to mayonnaise:
Chocolate Mayonnaise Cake

Ingredients:
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1-1/4 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1-2/3 cups sugar
1 tsp. vanilla extract
1 cup Hellmann's or Best Foods Real Mayonnaise
1-1/3 cups water
Instructions:
1. Preheat oven to 350. Grease and lightly flour two 9-inch round cake pans*; set aside.
2. In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.
3. In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in Hellmann's or Best Foods Real Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans.
4. Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely.
Frost, if desired, or sprinkle with confectioners sugar.
*Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.
It should be noted that if someone is watching their waistline, you can make these recipes using reduced calorie mayonnaise, although the final result won't be quite as moist.
As for frosting, the general consensus is that the cake is perfectly fine on it's own. I personally love chocolate cake of any kind with just a dusting of powdered sugar. But, you can use any frosting you like. Chocolate frosting makes a decadent chocolate delight. Though many people like to serve it with a cream cheese frosting.
